Ginger Market Overview (2025 Mid-Year): Export Pressure Highlights

Supply: Expansion Meets Climate Risks

Ginger planting area keeps growing, especially in major regions like Shandong and Hebei, with a 15%-25% increase since 2022 due to high prices in that year. In Laiwu, the purchase price of fresh ginger reached CNY 5.2–5.5/500g (≈ CNY 10.4–11.0/kg, or USD 1.46–1.54/kg, ≈ EUR 1.35–1.43/kg) in early 2025, far above the planting cost of about CNY 4/kg (≈ USD 0.56, EUR 0.52). However, with planting scale expanding, prices are starting to fall.

At the same time, climate change is a hidden threat. Droughts and floods in 2024 caused over 20% reduction in output. Although 2025 has seen stable weather so far, ginger diseases like ginger wilt are spreading in some areas, affecting quality.

Demand: Export Faces Strong Pressure

Export is under serious pressure. In Q1 2025, ginger exports dropped by 25% year-on-year, mainly due to weaker demand from Southeast Asia, Japan, and South Korea. In addition, trade barriers have made international sales harder. This export decline has made it more difficult to digest high domestic supply.

Domestic demand is also weak. Slower economic growth has hurt the food service industry, reducing overall ginger purchases by 10%-15%. However, e-commerce sales channels and use in traditional Chinese medicine still offer some support, especially during the summer “treat winter disease” season.

Cost & Capital: High Costs, Low Returns

Speculative capital (hot money) has left the market. In 2024, it caused prices to spike by 50%, but this year, less capital is stored, so there is little price support. Meanwhile, planting costs keep rising: seed ginger is up 30%, and rent, fertilizer, and labor have all risen over 15%. In some regions, cost per mu (0.067 hectares) has passed CNY 10,000 (≈ USD 1,400 / EUR 1,300).

Policy & Market Expectations

Some local governments are limiting non-grain crops like ginger to ensure food security, which may reduce planting areas. Also, the central government has shown willingness to stabilize prices by releasing state reserves, as seen in 2024. This may happen again in 2025. Farmers are reluctant to sell, while buyers wait for lower prices—this gap causes more price swings.

Outlook: More Risks Than Gains

In short, the ginger market is facing four main pressures: oversupply, weak demand, rising costs, and lower capital involvement. If there are no major weather events or new policies, prices may continue falling. Still, high-quality products and strong online channels may offer some limited opportunities for growth, especially in niche export segments.
